The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
- Reheating Food (46.365)
Observed the internal temp of the taco meat was 112* and the internal temp of the cheese vegetables was 85.9. All product was discarded
- Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
Observed the internal temp of cut tomatoes 57.5, salsa 60, cut cantaloupe 56.5, ham 55.7, chicken 56.5, shrimp 56.5. All product was discarded. Product was taken out of walk in cooler approx 10:30 - 11:00 with no temps recorded into estabs temp log.
- Cooling, Heating, & Holding Capacities (46.611)
Observed the internal cold temps on the salad bar ranged from 55.7 to 60* . The ambient temp of the walk in cooler where product was kept was 27*. Mgr. stated the cold bar was not turned on that why temps where elevated.

Observed plastic service utensils that have been melted or are in disrepair being used for service.

Food employee observed storing clean food equipment while wet, and not allowing time for draining and/or air-drying.
- Cleanability of Floors, Walls, & Ceilings (46.921)
Observed floor tile are busted and or missing in the dish area and the area just outside of the dish room. The grout throughout the kitchen is in very poor condition and needs to be re-pointed to stop the pooling water throughout the kitchen.

Observed dishwasher handling dirty dishes and running them through the dishmachine then putting the clean dishes away without washing her hands. Observed employees multi tasking with gloves on, employees are going in and out of cooler, front service line and adjusting there pants with gloves on and not washing there hands and changing gloves.

Single use gloves being used for multiple tasks without being changed, or not being discarded when damaged or soiled.

Observed salsa on the salad bar had internal temp of 49*, product was not chilled prior to it being put on the salad bar. Observed the internal temp of sour cream on salad bar was 51, product was overloaded.

Observed the alto shame has a heavy build up of grease which is over flowing out of the box and onto the floor. Observed the underisde of the countertop mixer has old encrusted food. Observed the bulk ice machine in the kitchen has black slimy residue around the ice chute. Observed the ice machine in the wait area has black slimy residue around the ice chute. Both machines where shut down and are not allowed to be used until units are cleaned and sanitized. All ice is required to be discarded. Observed there is food debris inside of the reach in bakery cooler.

Observed the mop sink is clogged up and the sink is full of water that cannot drain.

Observed the walls throughout the entire kitchen has old splattered food which is encrusted. Observed there is a build up of dirt and food residue throughout the kitchen and prep areas underneath of equipment and along the floor edges. Observed the door coming in the kitchen has pudding splattered all over the kitchenside of the door.
