    Mouse droppings were observed on top of bulk food storage containers, and inside a bulk container of salt. The owner was instructed to discard the contaminated salt. A soiled apron is used to cover a container of rice. Several uncovered food items, including a container of chicken located on the floor, were observed in the walk-in refrigerator.

    Bulk food storage containers are not labeled with their contents.
  • In-Use Utensils & Between Use Storage (46.302)
    A spoon used to scoop rice from a rice cooker is stored in stagnant water.
  • Food Storage Requirements & Prohibited Areas (46.321)
    Food is stored on the floor of the walk-in refrigerator.
  • Design & Functionality of Temperature Measuring Devices (46.590)
    Thermometers must be provided for all refrigerators and freezers.
  • Equipment in Good Repair & Proper Adjustment (46.671)
    -A residential microwave, toaster oven, and freezers were observed. -Unfinished wood shelves were observed throughout the facility. -Cups are used as scoops in bulk food storage containers. -Bulk soy sauce and MSG containers are reused for other bulk food items. -A garbage grinder is installed on a shallow, wall-mounted, drop in counter hand washing sink.

    The owner admitted to washing food equipment and multi use utensils in a single basin sink.
  • Backflow Prevention Device when Required, Backflow Prevention Device on Carbonator (46.823(d)(e))
    A backflow prevention device is not installed at the water meter.
  • Toilet Rooms Enclosed & Self-Closing Doors (46.922(d))
    The restroom door is not self closing.
  • Controlling Pests, Removing Dead or Trapped Birds, Insects, Rodents and Pests (46.981(k)(l))
    Numerous mouse droppings were observed along floor perimeters, on shelves, on food storage containers, and in bulk food. Two live baby roaches were observed on the floor of the food preparation area. Several dead roaches were observed on the floor throughout the facility.
