Cooked / cooled chopped chicken was held at 47 degrees F rather than 41 degrees F or below as required in the double door refrigeration unit. Product discarded due to temperature abuse, One commercially packaged cooked ham and a block of commercially packaged unsliced cheese was held at 44 degrees F rather than 41 degrees F or below. Product relocated into the walk in cooler 37 degrees F.

Commercially prepared deli salads offered without informing patrons ingrediants upon request and preservatives.

Protective plastic not removed from the Customer self service milk dispensing unit. The hose was not cut at an angle to allow proper drainage.

Food facility commercial double door coke refrigeration unit was observed with an ambiant air temperature of 49 degrees F and not maintaining all potentially hazardous refrigerated foods at a temperature of 41 degrees F or below. Unit temperature control adjusted rechecked with in 30 minutes. Unit ambiant air temperature 41 degrees F. Monitor on a regular basis.

Temperature measuring devices for ensuring proper temperatures of equipment are not available or readily accessible in deli refrigerted equipment.
