Moist wiping cloths observed lying on deli meat slicer and not stored in sanitizing solution, to prevent the growth of bacteria.

Proper cold holding temperatures. Eggs sitting out of refrigeration unit on counter and not proper temperature of 45 degrees or below. See temperature log. Two dozen eggs dicarded. Instructed PIC to discontinue practice of storing eggs outside refrigeration unit.

All food equipment in use does not meet minimum design standards. Wooden pallets used to elevate food/beverage items in patron service area. Food/beverage items must be elevated on NSF/ANSI approved dunnage racks.
