    --Observed a full metal roaster ( approx. 6" deep ) of bean and sausage soup cooled in the upstairs walk in cooler. Properly cool PHF in shallow containers of 4" or less. Reviewed requirements with the PIC.

    --Observed a build up of liquid on the floor of the downstairs beer keg walk in cooler.
