    --Eggs were held at 121 °F, in the buffet area, rather than 135°F or above as required. Eggs were placed in the hot hold unit for 15 minutes. Eggs were reheated to >165*F and placed back on hot hold unit. Agent reviewed temperature requirements for hot holding and reheating with person in charge. Corrected on site.
