- Cooling Potentially Hazardous Food (46.384(a)(b))
--Large storage container of soup made earlier today stored within walk-in cooler with lid snapped tight had product temperature of 93-100*F after an unknown timeframe. Product removed, placed in ice bath and wand inserted to complete chilling process (down to 70*F in 2 hours), before being placed within walk-in cooler loosely covered until cooled to 41*F in an additional four hours.
- Cooling, Heating, & Holding Capacities (46.611)
--One (1) circulating fan not working for walk-in freezer evaporation unit. Question the section of mirror in the plated salad cooler above the prep area, it's blocking the air flow and there is a chip out of the one corner, remove immediately.
- Equipment in Good Repair & Proper Adjustment (46.671)
--Same issue with a number of broken, cracked, sections missing of the plastic / lexan storage containers and lids. Removed three (3) from clean storage, need to go through all and remove from service any compromised items.
- Sanitizing Solution Testing Device Provided & Used (46.634 & 46.674(e))
--Chlorine sanitizer test strips not found / available for checking low temp dishmachine sanitizer. OK today (using my test strips, 50 ppm chlorine, 139*F water temp.
- Objective of Cleaning Food Contact Surfaces & Utensils (46.711(a))
--Black mildew-like buildup on upper interior panel of ice machine storage bunker (as viewed with an inspection mirror and flashlight). Clean as needed.
