    --Beer/Dessert walk-in cooler had an ambient air temperature of 44 degrees. Salsa in the unit had an internal temperature of 43 degrees. The unit's thermostat was lowered on site. Air temperature measured 40 degrees by the end of inspection. Monitor temperatures daily.
  • Accurate Representation - Standards of Identity & Food Honestly Presented (46.421)
    --Observed products (example - Lasagna) which is prepared on site, frozen and thawed per portion which beared improper date labeling. When transfer potentially hazardous from a frozen to thawed state relabel the product with the present date, to allow for proper storage life.
  • Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
    --Clean the wire racks above the warming station
  • Light Bulb Protective Shielding (46.922(a))
    --Provide a light shield in the produce walk-in shield. Correct within 10 days.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    --Roof leak in the dishwashing room. Have the roof repaired withhin 10 days. Replace the missing ceiling panel.
