  • Time as a Public Health Control for Potentially Hazardous Foods (46.385(c))
    --Five (5) containers had wing sauce that were sitting on counter at room temperature with pieces of chicken wings. Facility stores wing sauce in containers that are then poured onto wings. Lunch is served from 11:00am to 2:00pm, and a cook returns at 5:00pm. PIC disposed of sauce, and stated she would review with staff that sauce must be disposed of after 4-hours, after they have had chicken placed in sauce.
