  • Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
    --Scrapple at 55 F, eggs at 53 F and breakfast ham and meats at 57 F were observed in the kitchen walk-in cooler. Maintain all TCS foods at 41 F or below. All affected food was discarded.
  • Light Bulb Protective Shielding (46.922(a))
    --One light fixture over the cooking line is missing a light shield. Replace the shield.
