There is a small inventory of product on the prep line which is held on ice. Some of this product exceeds 41 deg F. and must be used / disposed of within four hours. Operator does not maintain written records to assure the four hour rule is met.

There is some pink residue on the ceiling of the ice machine and in the holster for the soda dispensor in the bar. Hard to clean areas (under bottom shelf in the stock room) are also in need of cleaning.

The filters/grills for the ventilation hood above the pizza ovens haa some accumulation of grime. There is some standing water on the bottom of the wine cooler in the bar. This condensation is in contact with the bottom of the wine bottles.

As noted in previous visit: 'The handwash sink in the prep area has the hot water valve shut off due to a faucet leak'. Owner said he would repair this unit within 30 days.

There is some litter under the shelves in the dough mixing room.
