--Middle shelf-hot-holding was reading 110-120F was held at 110-122°F, in the deli self-service area, rather than 135°F or above as required. Food moved to lower shelf which was reading 140-145F. Thermostat adjusted. Third soup kettle was reading 117-120F instead of 135F at a minimum.
