Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
--Observed fish thawing in plastic tubs on top of tables with an internal temp. at 48*F. to 50*F. Cold hold PHF at/below 41*F. According to the PIC this fish was taken out of the walk in cooler at approx. 11:30 AM. Approx. one hour prior to the start of this inspection. All the fish was placed back in the walk in cooler at the time of this inspection. Reviewed proper handling/thawing requirements with the PIC. Corrected.
Thawing Potentially Hazardous Food (46.383)
--Tubs of fish observed thawing at room temperature on the tables in the rear storage room attached to the large banquet hall, which is not an approved thawing method. Thaw fish under refrigeration, under cold running water or as part of the cooking process.
