  • The menu at Timō, the new bistro located in Sunny Isles, Florida, reflects co-owner/executive chef Tim Andriola’s love for the flavors, textures and accents of Italy and Mediterranean. This appreciation developed during early in his professional career, during an internship in Italy and Spain, but the seeds for Andriola’s love affair with food were sown in his childhood. As a child in his native Hampton, New Hampshire, Andriola worked with his father at their family-owned restaurant. As a teenager, he apprenticed with local chef Ron Boucher at his eponymous Ron’s Beach House, where Andriola’s passion for cooking firmly took root. After high school, he enrolled in the CIA, where he graduated at the top of his class with honors and received the Francis L. Roth Award for outstanding performance. In 1992, he moved to Miami, where he earned a Bachelor’s Degree in Hospitality Management from Florida International University. Following that, he interned in Italy and Spain, where he fell in love with Mediterranean cooking – a love evident in Timō’s menu. Since then, he has trained and worked in some of the top kitchens in the US, including Chez Panise, Charlie Trotter’s, Tra Vigne, Olives and, locally, at Chef Allen’s in Miami, where he worked as chef de cuisine for five years. Prior to Timō, he served as executive chef at Mark’s South Beach which, during his close to three years at the helm, was named number one in Miami (Gourmet) and best new restaurant (Bon Appetit). In addition, Esquire food critic John Mariani cited Andriola as a “chef to keep your eye on,” noting that Andriola “definitely has a touch of the master.” When it came time to open his own restaurant, Andriola looked no further than his own backyard. “This is my neighborhood,” the ten-year Sunny Isles, Florida resident says. “It’s a perfect spot for locals and visitors who love to dine out and don’t want to travel to do so.” With the exception of Timō, Sunny Isles is mostly populated by ethnic restaurants and the large scale deli, Rascal House, a South Florida institution since its opening in 1954. Andriola wanted to open something more upscale than the neighboring restaurants and found the 3200 sq. ft. dream location during his studies in the Masters Program in Hospitality Management at Florida International University. The project was to design a restaurant on paper, for which Andriola used the Timō location as a model. Years later, after leaving Mark’s to explore a solo venture, he purchased it with partner Rodrigo Martinez, former general manager/wine director of Norman’s in Coral Gables, who oversees day-to-day operations.
