- Observed: (1) A drying rack at the 3 compartment sink that had clean food service wares that had food residue on then from being splashed from the 3 compartment sink cleaning operation. Equipment used in storing food not cleaned; (2) Inside of Ice machine with moderate mold growth. Recommend to relocate drying rack from splash zone and wash, rinse, & sanitize the Ice Machine's entire inside and its components
