  • Two thermometers in the walk-in cooler was either broken or not displaying the accurate temperature.

  • 229.163 (h) (6) wash as needed. 1. Observed employee handling cooked brisket with his bare hands then dipped his hands in the bucket of sanitizer AND soap that is used to store moist rags. The bucket filled with sanitizer is only used to store moist rags to sanitize food contact surface. ***Look at the Notes and the end of this report to discuss the soap/bleach water.**** It is not a means or a way for employees to wash there hands. 2. Observed another employee using the handsink to rinse off a potatoe. The handsink is only used for handwashing purposes only.

  • Please provide that the Manual Ware Washing sink is meeting minimum sanitizing temperature.(Three Compartment sink was only measured at 109F at time of inspection.)
  • Please provide that all food contact surfaces are cleaned and sanitized.(Ice machine is dirty with mold at time of inspection.)
  • Please provide that the sanitizing buckets meet a range of 50-100ppm.(No sanitizer measured at time of inspection. Manager remade sanitizing solution for all sanitizing buckets in the kitchen area.)
