Temperature gauge was also not working at time of inspection. This mechanical dishwasher may not be used until it has been repaired and the final rinse cycle temperature reaches 180 degrees F or above.

Observed employee on food line handle his ear buds with his gloved hands then continue to handle ready-to-eat foods. single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation.
- Observed PHF in cold-hold unit underneath grill to be at 51 degrees F. All PHF was removed and put in ice to cool back down to 41 degrees F (still in allotted time). This unit may not be used until it has been serviced and can keep food at the required temperature (41 degree F or below).
