- Observed chicken tenders and onion rings being stored in a hot holding unit at a temperature of 113 degrees F. Employee stated that these items were out for less than 2 hours so allowed the employee to re-fry items to bring their respective internal temperatures to >165 degrees F.
- Unable to locate an accurate thermometer affixed to the outisde of the walk-in refrigeration unit or a dial type or hanging type thermometer inside the walk-in refrigeration unit. Provide a thermometer inside thie walk-in refrigeration unit immediately.
