  • UTENSILS FOUND TOUCHING WALL. ENSURE NO FOOD CONTACT SURFACES ARE IN CONTACT WITH WALL OR FLOOR.
  • EMPLOYEE OBSERVED SWITCHING BETWEEN VARIOUS TASKS, WIPING HANDS IN TOWEL, AND RETURNING TO OPEN FOOD HANDLING WITH BARE HANDS. ENSURE EMPLOYEES ARE WASHING HANDS BETWEEN TASKS AND NOT JUST WIPING HANDS IN TOWEL.
  • SITE HAS A CERTIFIED FOOD MANAGER BUT NOT ON SITE DURING INSPECTION. ENSURE AT LEAST ONE CERTIFIED FOOD MANAGER WITH PROOF OF CERTIFICATION IS PRESENT DURING OPERATION HOURS.

Observed unmarked left over lasagna slices in coolers that were made beyond 24 hours ago, and 2 lasagna slices with prep date unknown -- condemned.
  • Do not shelve for consumption foods from dented cans.
  • There must be at least one person per shift who is Food Manager certified.
  • 229.164 (o) (7) (B) consume by date (pkgd). Refrigerated, ready-to-eat, PHF prepared and packaged by a food processing plant must be clearly marked at the time the original package was opened in a food establishment if the food is held for more then 24 hrs and may not exceed manufactures consume-by date. Observed unmarked packaged slices of cheesecake.
  • 229.165 (h) (2)thermometer available. Ensure all coolers storing potentially hazardous foods (including cheesecake and dressing) have thermometers.
  • 229.163 (n) (1) eat.drink.smoke. Employee drinks must be consumed from clean closed beverage containers with cleans hands and AWAY from food prep areas. Observed an employee drink on the prep table above sandwich cooler.
