  • Ensure good hygenic practices. Ensure hand sink is used only for hand washing. Also, Ensure that the paper towels used to dry hands are not used for wiping face or used as a pot-holder after hand washing activity. Found employess wiping face with towels during hand-drying.

  • Please be sure to perform a proper and adequate handwash between tasks. Gloves shall also be changed between tasks and a handwash shall be performed before placing gloves on hands. Found employee wearing gloves and changing tasks without a proper handwash. Employee performed task at 3 compartment sink and then pulled chicken from warmer and placed in hot holding area without handwash and glove change.
  • Please ensure proper sanitizer concentration during warewashing activity. No quat sanitizer detected at 3 compartment sink during warewashing activity. Follow manufacturers instructions for use of the chemical sanitizer.
  • Please ensure a certified food manger is present during operation. No certified food manager on duty.
