An employee must eat or drink only in designated areas where the contamination of exposed food; clean equipment, utensils, and linens; unwrapped single-service and single-use articles; or other items needing protection cannot result.
229.163 (n) (1) eat.drink.smoke.etc. Observed employee cell phone stored on donut decorating table. Ensure all personal items are stored in area where the contamination of exposed food cannot occur.
229.165 (k) (14) (C) quat solution. Observed quat concentration at 3 compartment sink to be above the maximum allowed 400 ppm. The water temperature was also above the maximum temp suggested by the manufacturer. When filling the 3 compartment sink for dishwashing, ensure employees are using water at the correct temperature and the sanitizer is at the correct concentration (between 200 and 400 ppm).
