- Establishment needs to make sure that cold hold items are reaching an internal temperature of 41 degrees F and colder; many cold hold items prepared approx. 3 hours ago at a temperature of 56 degrees F; food items were transferred to the walk in cooler; establishment has approx. one hour left to get temperature to 41 degrees F and below or be forced to condemn items.
- Do not use handwashing sink as a dump sink for food items; handwashing sink should only be used for the purposes of employees washing hands.
- Make sure to label all working spray bottles with the common name of the chemical inside; also make sure to keep all cleaning products away from food items and stored in their designated area. 229.168 (c) (1) toxics stored.
- At time of inspection, hot water(which is used as the final sanitizer) to mechanical warewashing machine was not reaching at least 180 degrees F; one of the boosters was out; engineering will provide one booster to reach 180 degrees F; the other will have to be repaired; make sure to keep written logs/documentation on temperatures daily. 229.165 (k) (12) (A) (ii)machine sanitize 180-194F.

- Employees need to make sure and cover drinks and keep away from food items(salt and pepper shakers). Keep drinks stored at the lowest possible shelf and again away from clean equipment/food items.
