- 229.165 (r) (3) (D)no sanitization. Observed mechanical ware washing machine being operated with no chemical sanitization because it was turned off. Once turned on was sanitizing at 100 ppm. Instructed employee responsible for ware washing to rewash all wares using sanitizer. Instructed management to purchase test strips for both quat and chlorine sanitizers. Further explained the importance of having the employee responsible for making the buckets test every time a bucket is prepared and the employee responsible for ware washing test every morning to ensure sanitizer is turned on and is working.
