  • The hot water heater must have a large enough capacity to provide hot water during all hours of operation- long delays to arrive at hand sink in front area near drive thru/prep area in excess of 1 minute wait time.
  • Use effective means of pest control for gnats- under soda fountain at self service/mop sink area/dry storage
  • Sanitizing solution is over approved range in excess of 400 ppm
  • Install an air gap of two times the diameter of the drain line between the food handling equipment and the sewer line. Ice machine drain. * Mop sink back flow preventor is leaking making it an ineffective device.* Soda fountain at customer self service counter is leaking into a catch bucket under counter- lines are molded.
  • Provide thermometers in all coolers with TCS foods- reach ins on grill/fryer lines
  • Discontinue using broken/chipped wares for food storage- egg roll container is broken and missing a large piece. Equipment with rough edges poses a contamination risk. * In use equipment dirty to sight/touch such as toaster oven handles/edges, egg rings for grill, gaskets on reach ins have a large accumlulation of food debris, squirt bottles with butter/grease/oil are wrapped in a paper bag due to the outside of the bottle too greasy, food debris in single service baskets.

  • 229.163 (n) (1) eat.drink.smoke.. Employees must drink from clean closed beverage containers with cleans hands and away from food prep areas.(observed employee/manager food eating near outgoing PHF (Potentially Hazardous food.
  • 229.166 (i) (1) (B) HWS improper use. Use this sink is for handwashing only.(Observed employees pouring drinks and food inside designated handwashing sinks.)
  • 229.167 (e) (3) (A) no towels. Supply each handwash station with individual disposable paper towels.(Observed no disposable towels at none of the designated handwashing sink's.)
  • 229.165 (r) (3) (D)no sanitization.(There was no sanitizing for the manual washing for the 3 compartment sink and no sanitizing solution or agent inside the sanitizing buckets.)
  • Clean in use utensils. (Observed dirty tongs that are regulary used to handle outgoing food items and the compartment holdster was also dirty.)
