The 3 compartment sink temped at 102 degrees F. Ensure the hot water at the handsink is at least 100 degrees F and the 3 compartment sink is at least 110 degrees F.

  • At time of inspection, owner notified inspector that 3 compartment sink drain was clogged. He stated that a plumber is coming to establishment today to fix problem. Ensure drain is fixed so wastewater does not pool onto floor and drains properly.

  • Date mark refrigerated, cooked(Barbacoa) with preparation date if held in refridgerator more than 24 hours. Food must be discarded after 7 days.
  • No Ceritified Food Manager on site. Second notice to obtain Certified Food Manager Certificate. On 8/21/2010, inspector noted initial violation. Follow up inspection on Thursday April 7, 2011. Enroll in Certified Food Manager course by date above, provide of receipt. A Certified Food Manager is required at all times during operation. When course is complete, take certificate to 1901 S. Alamo and go to Health Desk for Metro Health ID Card. Cost of ID card is $15.45

  • Hot water to both handsinks in manufacturing room is cut off and the handle to the cutoff is broken so that even with pilers unable to open hot water.
  • Place towels at handsinks at all times.
  • Use approved pest control measures to rid establishment of roaches.
  • 3 compartment sink in manufaturing room is not hard plumbed to sanitary sewer--water spills onto floor in the next room. Until this repaired use the 3 compartment sink in the retail section of establishment.
