229.166 (i) (1) (B) HWS improper use. Observed mason jar stored in kitchen hand washing sink. A hand washing facility may not be used for purposes other than hand washing. 229.164 (e) (1) (D) (ii)Bare hand contact. Observed employee use bare hand to hold pastry while applying butter. Food employees may not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment. 229.168 (d) (2) (A) (ii) not according to label. Observed unapproved pesticides (cans of Raid) in kitchen area. Use pesticides which the manufacturer's label instruction state that its use is allowed in a commercial food establishment or use a licensed pest control company. * 229.163(b) Demonstration of Certification. PIC could not successfully demonstrate required knowledge. A certified food manager must be present at all times during operating hours. 229.165 (d) (1) (B)free of breaks, cracks. Observed lid on big mixing machine to be broken and cracked. Lid must be replaced or repaired. Ensure all equipment are free of breaks, open seams, cracks, chips, inclusions, pits, and similar imperfections. Expired 04/2015... Ch 13, Art II, section 13-26 Display permit. Sink by ice machine had no hot water. Ensure all sinks have hot and cold water at all times. Owner will have sink fixed asap. 229.165 (q)food contact not sanitized. Ice machine had a lot of mold/mildew build up. Ensure the ice machine is cleaned/sanitized as soon as possible. 229.165 (m) (1) (A)not clean. Observed knives stored improperly under grill. Ensure knives are sanitized and stored properly when not in use. * 229.163(b) Demonstation of Knowledge. PIC could not successfully demonstrate required certification. OBSERVED UNLABELED BULK CONTAINERS OF DELI MEAT AND CHEESE LOCATED INSIDE THE WALKIN COOLER. MAY USE DATE ORIGINAL PACKAGING WAS OPENED AS DAY 1. CONSUME OR DISCARD FOOD AFTER 7 DAYS. HAVE A CERTIFIED FOOD MANAGER ON DUTY DURING HOURS OF OPERATION. HAVE DOCUMENTATION/ CITY HEALTH DEPT FOOD MANAGER'S CERTIFICATION ID CARD AVAILABLE ON SITE. CORRECT BY THE NEXT ROUTINE INSPECTION. ADJUST HOT WATER TEMPERATURE FOR HAND SINK LOCATED BY THE DRY FOOD STORAGE AREA TO REACH AT LEAST 100F. CURRENT READING IS 80F. DO NOT USE THIS HAND SINK UNTIL REPAIRS ARE COMPLETED AND THE HOT WATER IS REACHING AT LEAST 100F. USE OTHER AVAILABLE KITCHEN HAND SINKS FOR HAND WASHING.	07/14/2014	85
