All potentially hazardous foods must be cooled properly before placing into cooler for storage overnight. Rapid cooling is suggested using shallow pans when placing foods into cooler unit or placing container of food into an ice bath and stiring occasionally. Must bring temperature from 135 degrees F. to 70 degrees F. within the first two hours, then bring temperature down to 41 degrees F. within the next 4 hours.
Must date mark larger containers of ready to eat foods being stored overnight or for more than 24 hrs in cooler.
Must provide hand soap at kitchen hand sink during all hours of operation.
