- Observed plastic containers where sauces and shredded cheese is stored for pizza preparation, to be broken on edges. Ensure that all dishware and utensils used for storage and preparation of food is in good repair. If cracked and broken, items should be replaced. -Observed bagged olives being stored in plastic bins in refrigerators. Plastic bins appeared dirty. Ensure to store all food and utensils/dishware, etc on clean surfaces to prevent cross contamination. -Observed pooling water from condensation in cold hold unit, where bag of string cheese was being stored. Employee moved food from being stored on water. Manager stated that a work order has been placed for unit, and that they hope that unit is corrected within the next two days.

If a barrier such as gloves, utensils will nto be used to handle ready to eat foods, then documentation with the following is rquired. 1. statement of two barriers that will be used (double hand washing hand sanitizer, etc) 2. statement of corrective action when rules are not followed (retrain employee, discard food, etc) 3. signatures of all employees stating acknowledgement
- hand sink in womens bathroom did not have soap. Hand sinks should be supplied with soap.
- observed container with sanitizing solution to not read at correct ppm. Ensure test strips are used for proper reading of sanitizer. Bleach water should read at 50-100ppm and quat solutions should read at 200-400ppm.
- observe cutting boards with heavy scarring, wtih black colored markings in between cuts. Ensure all utensils, dishware, food contact items are in good repair. Should be smooth, easily cleanable and non absorbent.
- Food license posted expired in 2011. Inspection report posted was from June 2012. Last inspection report was done in October 2012. Ensure permit and inspection report are updated and posted in public view.
