This cheese may be served until 3 pm today; after 3 pm today all cheese on the service line must be discarded if not used before then. Potentially hazardous food must be held below 41 degrees F or above 135 degrees F unless the food is being cooked, cooled, used immediately in prep, or when time only is being used as a public health control.
- Raw chicken, hamburger patties, sliced tomatoes, and cheese, and deli meat on two racks in the walk-in refrigerator were at temperatures between 44-50 degrees F. Manager on duty indicated that these racks were pulled out of the cooler when milk and other items were being delivered and stocked at 11 am this morning. Establishment has until 3 pm today to cool these food items to below 41 degrees F or reheat these items to 165 degrees F and serve. Potentially hazardous food must be held below 41 degrees F or above 135 degrees F unless the food is being cooked, cooled, used immediately in prep, or when time only is being used as a public health control.
