INSPECTOR ENCOUNTERED RAW UNCOOKED TURKEY BEING STORED ON CONTAINER OF READY TO COOK PIZZA PIES.
- 3 COMPARTMENT SINK NOT PROPERLY ARRANGED IN REQUIRED SEQUENCE OF ONE COMPARTMENT EACH FOR WASHING, RINSING, SANITIZING. 1) Inspector found each compartment of 3-compartment sink properly labeled yet not set up as required. Only the wash compartment was arranged as required. Sanitizing solution was in Rinse compartment and said solution was being used for both rinse and sanitizing.

- observed bottles storing toxic chemicals being stored on shelf in pantry to not have labels. Ensure to label all toxic chemicals to prevent cross contamination.
- observed three compartment sink to be set up in wrong order of wash, sanitize, rinse. Ensure to set up sink as follows: 1. wash (soap and water) 2. rinse (water) 3. sanitize (dishes should be in contact with sanitizing solution for a minimum of 30 seconds.)
- observed dish rack to have hard water buildup and grime. Ensure to have dish racks cleaned thoroughly as often as necessary to have surfaces clean and to prevent cross contamination.
