- Ensure good hygienic practices. Employees must drink from clean, closed beverage containers, with clean hands, and away from food prep areas. During inspection employee drinks were observed on prep tables and near hot hold unit without lids. Employee cell phones and radios should not be stored on prep table or on any food contact surfaces. During inspection employees cell phone was being stored with food containers and on food servie line.
- Ensure cross-contamination does not occur by storing food in covered containers. During inspection raw chicken in cold hold unit was not covered to prevent cross-contamination. Numerous items in walk in cooler did not have lids or covers either.
- Ensure sanitizing solution is within 50-100 ppm. During inspection employees were observed cleaning surfaces without any sanitizing solution. Employee says sanitizing is only done in the evenings.
