  • Observed employee store personal food on top of dough balls. Ensure personal food and beverages are stored in an area that will prevent the contamination of food, wares, and single service/use items.
  • Observed raw shelled eggs and raw meat stored above salsa and produce. Raw bacon was stored next to prepared food. Ensure all raw animal products are stored below and away from ready to eat and prepared foods.
  • Observed prepared food that was in walk in cooler for more than 24 hours with a prep date label. Ensure prepared food that is kept for more than 24 hours has a date label with the use by date. The use by date should not exceed 7 days from the prep day and the prep day will count as day 1.
  • Observed several containers of food in walk in cooler being stored without a protective covering. Ensure food is stored with a protective covering, such as foil, plastic wrap, or plastic lid.
  • Observed employee finish chopping produce and use a towel to wipe knife before hanging knife on magnetic strip. Ensure wares are properly washed (soap and water), rinsed (water), and sanitized (bleach and water) after use.

  • Salsa inside containers sitting on tables was 65 degrees F; the manager on duty indicated that the salsa had been removed from temperature control at around 8 am this morning. This salsa must be cooled to 41 degrees F, served, or discarded by 12 pm today. Potentially hazardous food must be held below 41 degrees F or above 135 degrees F unless the food is being cooked, cooled, used immediately in prep, or when time only is being used as a public health control.
  • Observed a spoon inside the hand washing sink. Observed an employee fill a glass of water using the faucet at the hand washing sink. The hand washing sink is to be used for hand washing only.
  • Observed an employee wipe a spatula and pan with a cloth towel between uses. Whenever food contact surfaces require cleaning they must be washed, rinsed, and sanitized. Food contact surfaces should never be wiped with a dry cloth towel.

Cooked beef, cooked chicken, and cooked beef were resting on shelf near griddle; the cooked potatoes and chicken were at a temperature of 67 degrees F and the cooked beef was at a temperature of 90 degrees F. Manager on duty indicated that the potatoes and chicken were removed from temperature control at 10:30 am and that the cooked beef had been removed from temperature control at around 11 am. Establishment may serve potatoes and chicken until 2:30 pm today provided the items are reheated to 165 degrees F before serving; the beef can be served until 3 pm today provided it is reheated to 165 degrees F before serving. Potentially hazardous food must be held below 41°F or above 135°F except during preparation, cooking or cooling or when time is used as a public health control.
  • 229.166 (i) (1) (B) HWS improper use. Observed an employee dump drink down hand washing sink. Discontinue this practice and use the hand washing sink for hand washing only and nothing else.
  • 229.163 (n) (1) eat.drink.smoke. Observed an open drink container being stored on same table that meat was being cut on. Employees must drink from clean closed beverage containers with clean hands and away from food prep areas.

  • Observed cut sausage in a metal container sitting on top of a griddle; the sausage was at a temperature of 85 degrees F. Manager on duty stated that this food item had been out since about 7:30 am. Instructed manager to heat the cut sausage to 165 degrees F and use immediately.
  • Establishment operating with a food permit that expired 04/30/10. Establishment has 10 days to purchase a valid food permit. Failure to do so may result in the establishment being forced to cease operations.

Had breakfast there on 8/22….total bill was 44.41 and a separate 3.66 food tax which I understand everyone seems to be doing total was 48.07. My credit card shows 49.99 just putting it out if this restaurant is nickel and dimeing credit card users.

Love the Carne guisada and the chips and salsa. yummy. The tortillas taste home made. Very easy in and out drive thru. Their chips and salsa are both warm and tasty. The dining area is not very big but the taste of the food makes up for everything else it lacks. I love the home made flavor of the food, the authenticity, not the Jalisco style like some of the restaurants popping up at every other corner. Our hidden gem in the Southeast side of San Antonio. I believe they are associated with Party's off Hackberry. More yummy food. I have had the crispy tacos and they were delicious.
