- Observed raw bacon, raw shelled eggs, and raw fish being stored next to and above ready to eat foods and drinks. Ensure that all raw foods are stored in an area away from ready to eat foods, to prevent cross contamination.
- Observed prepared foods from day prior to not have proper date marking labels. Ensure that if prepared foods are to be stored more than 24 hours, that they are properly labeled with expiration date of 7 days, with preparation day counting as day 1.
- Observed cloth towels laying around prep tables, when cook stepped out of kitchen for a while. Ensure that cloth towels are stored in sanitizing solution immediately when not in use. Explained to management and food manager that test strips should be available in kitchen at all times.

- Observed personal cup used for employee beverage to be on counter, next to cloth towel and fruit bowl. Observed personal water bottle in pantry (manager stated it is open pantry for residents, so at times personal items are left behinf. Observed cell phone on prep table next to bowl with potatoes that are being cut for food to be served. Ensure all personal items are stored in an area designated and away from food and food contact surfaces.
- Observed pinto beans and carne guisada, being stored in refrigerator, which was prepared the day prior. If food is to be stored more than 24 hours, ensure to have proper date marking labels with expiration date of 7 days, with day of preparation counting as day 1.
- Hand sink paper towel and soap dispenser were empty at beginning of inspection. Employee provided paper towels, which were at counter, and stated AJAX dishwashing soap was being used. Please ensure to have hand soap and paper towels at hand sink dispensers at all times.
- Observed cloth towel underneath drain bowl where potatoes were being prepared. Observed cloth towels laying on three compartment sink. If cloth towels are to be used for multi purposes, ensure that they are immediately stored in sanitizing solution when not in use.
