  • 229.164 (m) (2) (D) 165F....The establishment's policy states that when foods such as prepackaged/precooked meats are removed from the walkin cooler, they will be placed in the microwave (assigned button 0), then placed for hot holding...however upon following the procedure, the meatballs only reached 126F....please re-evaluate the procedure so as the meats reach at least 165F for 15 seconds...
