- SERVICE COLD HOLD UNIT DRAWER UNITS LOCATED BENEATH THE GRILL SO THAT A TEMPERATURE OF 41F OR LOWER IS BEING MAINTAINED. CURRENT TEMPERATURES ARE RECORDING IN THE 5O'S. MANAGER STATED THAT A WORK ORDER HAS BEEN PLACES AND THAT THE UNITS MAY BE REPLACED. IN THE MEANTIME THE SMALL QUANTITY OF FOOD KEPT IN THESE UNITS ARE BEING KEPT ON ICE THROUGHOUT THE DAY. ALL REMAINING FOOD AT THE END OF THE DAY ARE TRANSFERRED TO THE WALKIN COOLER FOR OVERNIGHT STORAGE. I WILL FOLLOW UP ON STATUS OF THE UNIT DURING THE 7/15/14 FOLLOW UP.
- (1) CLEAN & SANITIZE INSIDE OF ICE MACHINE TO REMOVE GRIME BUILDUP. (2) RESURFACE OR REPLACE WORN OUT CUTTING BOARDS AS NEEDED. OBSERVED VARIOUS CUTTING BOARDS IN KITCHEN THAT NEEDED TO BE RESURFACED OR REPLACED TO ALLOW PROPER CLEANING OF THE BOARDS. (3) REPAIR CRACKED/DAMAGED LID OF BULK SALT CONTAINER. LID TO BE IN GOOD REPAIR.
