- Make sure that hot food is kept at 135 degrees F or above. If food is between 135 degrees F and 41 degrees F for more than 4 hours it must be discarded. Observed soup at 81 degrees F.
- Make sure that nothing drips, leaks, or falls into food. Observed water from fan in walk-in cooler dripping into bacon.
- Make sure that nothing drips, leaks or falls into food. Wire racks in walk-in cooler are crusted with food particles. Dirt from wire racks fall into open food containers beneath.
- Label open food in cold hold with date of opening or preparation. Food can be held at 41 degrees F for 7 days. After 7 days food must be discarded.
- Make sure that surfaces which will contact food are thoroughly cleaned and sanitized. Observed 2 knives on drying rack with food particles on the blades.
- Make sure that all equipment is in good condition. Observed melted ladel with rough edges. Observed large knife with handle broken off. Damaged and broken equipment must be discarded.
