In addition, a variety of meat not being held at 135 or greater. Allowed to keep and reheat meats greater than 120 degrees F. Disposed of approximately 30 pounds of meat in trash with bleach.
- 229.164 (f) (2) (A) (iii) cleaning / sanitizing. Freezers need to be defrosted and cleaned and sanitized and meat must be stored with food grade protective covering, foil, plastic wrap or baggies.
- Ch 13, Art IV, section 13-112(a)(1) and (2) CFM.
