  • Please ensure wastewater plumbing system is installed according to code. An air gap between the ice machine drain pipe and the flood level rim of the floor drain shall be at least twice the diameter of the drain pipe and may not be less than 1 inch. Found that air-gap was not present at ice machine drain point.
  • Ensure food contact surfaces of equipment and utensils are clean to sight and touch. Ensure dirt and mold are removed from inside of ice machine.

  • 229.163 (i) not in HWS. Employee dumping drinks in hand sink Use this sink is for handwashing only.
  • 229.166 (c) (3) hot water sufficient.Handwash station in back near employee restroom must be provided with hot and cold running water through a mixing faucet. Hot water must be at least 100F. Hot water of at least 110F must be provided to mopsink.
  • 229.167 (e) (2) no soap. 229.167 (e) (3) (A) no towels. All handwash stations must be provdided with soap and paper towels or hand dryer.
  • 229.166 (g) (3) mop sink. Mopsink is not connected to sanitary sewer system. Establishment must provide functional mopsink to dispose of wastewater.
  • 229.165 (m) (1) (A)not clean. Establishment must clean soda dispenser nozzles so that they are free of growth and buildup. Establishment must clean kitchen areas and shelves where utensils are located so that they are free of dust and debris.
  • 229.171(f)permit required. Your establishment must obtain and post a valid permit within 10 days. Please go to 1901 S. Alamo to obtain a new permit.
