Potentially hazardous food items that are removed from original packaging and placed in containers to be cold held must be labeled with the date they were removed from package. Do not serve potentially hazardous food items that have been out of their original package longer than 7 days.
  • Observed that a pair of tongs used to grab food were not clean to sight and touch. Clean food contact surfaces every 4 hours or as needed.
  • Observed that current food permit was not posted in public view. Post food permit in public view.
