The hot holding unit was not connected to power therefore it was not on and able to maintain proper hot holding temperatures. The gravy in the unit was voluntarily discarded and the unit was turned on. Ensure all foods requiring hot holding maintain a temperature of 135F or above.

- Observed a roach crawling inside the three compartment sink and a live roach underneath the three compartment sink. Eliminate the presence of insects by using any approved means.
- Observed that several multi-use utensils and the slots on the gridle where spatulas are stored were not clean to sight and touch. Provide for these items to be cleaned more frequently and thoroughly.
- Observed that a spatula, which was being stored for later use, was not in good repair. Repair or replace this item.
- A current food permit and the last inspection report from SAMHD were not posted. Provide for both of these items to be posted in public view.
