    Observed a container of cut tomatoes in an ice bath with an internal temperature of 56F. Keep all cold potentially hazardous foods at a temperature of 41F or below.
  • Wiping cloths: properly used and stored (-1 point)
    Wiping cloths used to wipe service counters, scales or other surfaces that may come into contact with food shall be used only once unless kept in clean water with sanitizer. (114135, 114185.1, 114185.3 (d-e)) Sponges shall not be used in contact with cleaned and sanitized or in-use food contact surfaces. (114135)
    Observed wiping towels left on preparation table. Store all wiping towels in designated area (i.e. sanitizer buckets) in between use.

    Observed several blocks of margarine with partially hydrogenated oils and 3.5 grams of trans fat inside walk-in refrigerator. Discontinue use of this margarine. Ensure all oils and margarines have less than 0.5 grams of trans fat (partially hydrogenated oils).


    • Post inspection comments:
    Observed several copies of food handler cards. Per operator, several employees work at other places in San Bernardino and store original cards with other employer. Make a list of employees that keep food handler cards with other employers and keep copies of their cards on-site. All other employees must have original food handler cards on-site.

    Unable to check employee restrooms during this inspection due to wet paint. Ensure employee restrooms are supplied with soap, toilet paper, and paper towels in appropriate dispensers.
