- Details:
- Much of the food at the steam table is less than 135F (see food temperatures in the measured observations section of this inspection report). Per Betty, restaurant opens at 11am and the food was put out on the steam table at 10:45am. Cook food to 165F and maintain hot food warm at 135F or above. Correct immediately. Steam table was turned up and food is warming up. This is a major violation and a re-inspection will occur in 2 weeks.

- Observed some chicken thawing in standing water in the 2 comp prep sink. If using water to thaw food, completely submerge food in the water and maintain cool water turned "on" to flush away loose particles of food.
- Comment:
- Food shall be thawed under refrigeration completely submerged under cold running water of sufficient velocity to flush loose particles in microwave oven during the cooking process. (114018, 114020, 114020.1)

- Observed food preparation occurring at the 3-comp sink (chicken and batter). This sink is for warewashing (utensil and dish washing only). All food preparation must occur a the food prep sink. Correct today. Corrected on site.

Toilet rooms shall be vented to the outside air by a screened openable window, an air shaft, or a light-switch activated exhaust fan, consistent with local building codes.
