Once the exam is passed and the certificate is received, fax (see fax number at the top of this page) or e-mail a copy to Kadeanne Linhares (klinhares@sjcehd.com). Be sure to include the name and address of the facility to ensure proper credit. Provide by 60 days. Cook on site today lacks the Food Handler Card. Per Ana he is finishing it up today and will e-mail it to me when complete. Food Handler Cards for Erwin and Juan are lacking also. Provide within 30 days.

    Details:
    At the start of the inspection, the hot water at the 3-comp sink, mop sink and hand washing sink is only 81F. Rechecks after employee turned the water heater to "high" were: 88F then 90F then 106F. Hot water at the 3-comp sink needs to be maintained at 120F (minimum). Hot water at the hand washing sink must be 100-108F. Maintain hot water on demand (do not turn "off"). Correct practice immediately.
    Comment:
    An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times. (113953(c), 114099.2(b) 114101(a), 114189, 114192, 114192.1, 114195)

    Details:
    The Food safety Certificate of Carlos Morales expired 7-7-2015. One person from this facility must obtain the 5 year Food Safety Certificate (also called the Food Manager) within 60 days.     Details:
    Observed raw chicken being thawed in the prep sink. No water was turned on. Also observed a beef roast in a basin on room temperature water (on the prep table). Proper thawing must be done in one of the following ways: under cool running water, in the refrigerator, in the microwave, or during the cooking process. Correct today.
