Provide 135 F or above for internal temperature of potentially hazardous food (PHF). Manager disposed tornadoes and corn dogs, then raised temperature of the heat unit to 144F. Retested franks to be at 133 F. Walk In at 48 F, Fresh reach-in cooler at 47 F. Provide 41 F or below for PHF.
