Comment: All food employees shall have adequate knowledge of and be trained in food safety as it relates to their assigned duties. Hot and Cold Potable Water Not Available Details: The hot water at the 3-comp was 108F - it gradually reached 120F. The hot water at the 2 comp prep sink is 108F. Increase hot water to 120F minimum. Correct today. The hot water at the handwashing sink in the men's restroom is 81F and at the women's restroom handwashing sink is 93F. Increase hot water temperature to these sinks to 100-108F. Correct today. Require all employees to practice double handwashing after using the restroom. Be sure the hot water is warm enough for proper handwashing. Hot water at the men's restroom increased to 101F at recheck, but the women's restroom remains at 93F. Comment: An adequate, protected, pressurized, potable supply of hot water and cold water shall be provided at all times.
