  • Observed raw hamburger stored above sour cream in the refrigerator in the kitchen. Raw meat juice was pooling on base of refrigerator. Raw food should be stored on the bottom shelf to avoid contamination. Items were moved by the manager during inspection.
  • Observed cardboard being used as a liner for shelves in walk in cooler. Cardboard is absorbent and not cleanable. Ensure all non-food contact surfaces are smooth, durable, nonabsorbent, and easily cleanable. Consider using a plastic liner.
  • Observed grease and debris buildup on front of white stove, fryers, and around flat top stove. Routinely clean these food contact surfaces.
  • Observed buildup on front of and in between gaskets of standing refrigerator and reach in coolers. Also observed food debris and raw hamburger juice on racks and bottom inside of the reach in refrigerator. Routinely clean these surfaces.
  • Observed bucket of tea bags being stored in front of handsink. Manage removed bucket from area. Ensure the handsinks remains clear and accessible at all times. Blocked handsinks reduce the likelihood of employees washing their hands.
  • Observed dumpster lid open. Ensure it remains closed.

  • Observed cook handling ready to eat sliced tomatoes with bare hands . Spoke with cook about using utensils or gloves.
  • Observed cardboard being used as a liner for the shelves in the beer walk in cooler. Provide a liner that is easily cleanable.
  • Observed burnt food debris build-up to the pizza oven rack in the bar. Counter top can opener has food debris build up. Wash, rinse, and sanitize these areas. The microwave in the kitchen has food debris build up. Per the manager the microwave is being regularly cleaned with soap. I suggest using a more heavy duty cleaning item.
  • Observed heavy grease accumulation on sides of fryers and stove surfaces. Food debris and raw hamburger juice observed on racks and bottom inside of the reach in refrigerator. The reach in salad cooler seals have debris build up. Cabinets have food debris build up. The walk in beer cooler has black build up around the inner door frame. Wash, rinse and sanitize all areas.
  • Observed dumpster lid not closed.
  • Observed several mouse droppings in the cabinets next to the refrigerator in the kitchen. I showed the manager and he agreed they were mouse droppings. Per the manager they have a pest controller. The presence of mice may be due to the food build up on the floor and the gaps between the screen door and its frame.
  • Observed the back screen door to have gaps. This could be an entrance for insects/rodents in the facility. Repair the door by 10/30/15, a TCHD employee will be back to ensure the door is repaired.

  • Found a metal pot of taco meat in the beer walk in cooler labeled 6/23/15 6 p.m. at 51°F. This product did not cool down fast enough and must be discarded. Corrected-manager discarded taco meat. Suggest cooling down in a different, shallower container in the future.
  • One thermometer in the kitchen read 23°F in ice water. It was re-calibrated in ice water to read 32°F.
  • Observed cardboard being used as a liner for the shelves in the beer walk in cooler. Provide a liner that is smooth, durable, non-absorbent, and easily cleanable.
  • The insides of the fridges, freezer, and cabinets in the kitchen and bar area had a build up of food and debris. Clean and sanitize them.
  • Found build-up of grease/debris inside microwave, grill, stove, and toaster. Clean and sanitize these areas.
  • The outsides of the fridges and cabinets had a build up of grease and debris. Clean and sanitize them.
  • Dumpster lid was open. Keep it closed.
  • The paint on the kitchen floor was chipping. Repaint it. Replace cracked floor tiles in bar area.
  • Observed an unlabeled spray bottle of blue liquid stored under the bar 3-compartment sink. Manager labeled it Windex.

  • Observed raw hamburger stored above uncovered sliced mushrooms and a carton of eggs on the top shelf of the reach in refrigerator. Also, stored next to uncovered sliced onions. Potential for cross-contamination. Raw products shall be stored on bottom shelf.
  • Observed cook handling ready-to-eat foods with bare hands (hamburger buns and burger ingredients) and not washing hands prior. Informed cook to wash hands.
  • Observed sanitizer cloth towels stored on can opener. No sanitizer bucket made in kitchen.
  • Observed burnt food debris build-up to the pizza oven rack in the bar. Wash, rinse and sanitize.
  • Observed food and grease build-up on the reach in prep cooler and the door seal gaskets. Observed all kitchen equipment handles with food or grease build-up. Wash, rinse and sanitize all kitchen equipment handles. Heavy grease accumulation on sides of fryers and stove surfaces. Food debris and raw hamburger juice observed on racks and bottom inside of the reach in refrigerator. Wash, rinse and sanitize all kitchen equipment.
  • Observed food contact surfaces of utensils presented to employee, stored in bucket in the kitchen. Proper stored/present utensils.
  • Observed dumpster lid not closed.
  • Kitchen floor becoming worn and not easily cleanable.
  • Food food and grease build-up throughout kitchen floor under equipment. Clean.
  • All ceiling tiles stained from cooking in the kitchen. Clean/replace. Observed ventilation hood crates heavily soiled with grease. Clean.
  • One of the ventilation hood crates were broken. Replace.

  • Cut tomatoes in prep cooler not labeled with date/time of preparation. All ready to eat foods must be labeled when they are removed from original container. Label containers of tomatoes with the day they were cut and stored.
  • Hamburger patties in reach in cooler not fully covered. Food must be covered at all times while in storage.
  • Broken handle on reach in freezer in back of facility. Replace the handle.
  • All food contact surfaces need to be washed, rinsed, and sanitized routinely throughout the day. These surfaces include but are not limited to the cutting board and inside the fridges/coolers/freezers. The cutting board can be flipped over and washed, rinsed, and sanitized if the other side is in good condition and free from stains and deep cuts.
  • All non-food contact surfaces need to be washed, rinsed, and sanitized routinely throughout the day. These surfaces include but are not limited to doorways, the fire extinguisher, cabinet fronts, the stove top, fridge/cooler/freezer door seal gaskets, and handles.
  • Found two containers in the kitchen area stored wet as dry. Rewash, rinse, and sanitize the containers and air dry them completely before storage.
  • Dumpster lid was open at time of inspection. Monitor dumpster to make sure lid stays closed at all times.
