- The line cooler was not workin gproperly at time of inspection. I temped each food disposed of, ranged from 46f-61f. All TCS foods were voluntarily disposed of. Per manager themps weren't documented today. She did say an employee took temps at 10AM. she called the owner. The fan on the cooling unit was blocked so she cleaned that. Employees also put ice into the cooler. Discussed not keeping the cooler full. Once repaired contact Katie.
- The following were voluntarily disposed of: chicken salad (full), tuna salad (full), eggs (full), roast beef (full), tomatoes (full), buffalo chicken (1/2), guacamole (1/4), turkey (1/2), ham (full), steak (1 tray), chicken strips (1/2), sweet onion chicken (1/2), cold cut (1/2), chicken breast (full), salami/pepperoni(full), cheeses (full), 2 shredded cheeses (full).
- Observed employees improperly washing their hands. One employee touched the faucet to turn it off with her hands instead of a paper towel. The other used a paper towel, but was too quick in washing his hands. Also an employee had several bracelets on. Employees need trained on how to properly wash their hands. Also they can only wear a plain wedding band and medical alert jewelry. I need documentation of training by 7-24-15.
- The racks in the walk in cooler have paint coming off. The water heater is on a stand that is wood. The rack over the 3-compartment sink has paint missing.
- There was a rag on the prep counter by the sanitizer which also had a rag in it. The rag appeared to be dirty and had a hair on it.
- There is an accumulation of dirt by the cold unit control, cabinet under the soda fountain, and in chemical storage.
- The air conditioner unit is leaking.
- There are cracked floor tiles throughout the facility.
- There is coving missing by the door
- There is water accumulated on the floor due to the air conditioner unit leaking. Behind the file cabinet especially there is standing water that is making the floor dirty.
- The wall is damaged by the handsink and mop sink. There are also damaged ceiling tiles. There is also a board by the breaker box.
- There was a purse stored on the sauce storage.
- Observed the mop stored on the floor.
