- Observed individual portions of homemade Potato Salad with no label. Spoke with the owner about various labeling options. Food should be labeled and used within 7 days.
- Observed pans of Meatloaf, Ribs, Rib Tips, and Chicken in the walk in cooler without cool down documentation. All potentially hazardous foods should have cool documentation. I will attach cool down documentation sheets to the e-mail containing this report. Send me cool down documentation by 2/14/15, my contact information will be attached to the e-mail.
- Observed a metal stemmed thermometer at approximately 40 F. The thermometer was calibrated to 32 F during the inspection.
- Observed the reach in Beverage Air cooler containing Potato Salad and Coleslaw with debris build up. The shelves in the walk in cooler have food debris build up. Clean, and maintain routine cleaning.
- Observed a drain pipe from the walk in cooler draining into a pot. Per the owner, a plumber has come by to drain it but it still over flows. The pipe is currently catching in a pot sitting in a pan. Contact a plumber to look at the issue.
- Observed a spill on the floor of the walk in cooler. Clean, and maintain cleaning.
- Observed butane canisters stored above food storage containers and above clean dishes. The canisters were removed during the inspection. Chemicals should be stored under food and food contact surfaces.
- Observed extraneous items in the back room and throughout the facility. I suggest removing items that are not use from the facility.
- Per the owner, there are a few kitchen employees that do have food handler certificates. Employees handling food should have food handlers certificate within 30 days of employment. I suggest keeping a list of employees, their hire date, and date of food handler training. I will attach TCHD food handler class schedule to the e-mail containing this report.

- No chlor sant PPM in wiping pail in kitchen. It was remade to 100PPM.
- Found grease scum/soil buildup on shelves inside walkin cooler,some kitchen equipment, food containers.
- Found two open/uncapped drain pipes in back of kitchen. Also the 3 comp sink faucet leaks.
- Found some small holes in walls in kitchen. Fill in holes then clean walls from food debris.
- Found chlor sant >200PPM in wiping spray bottle in back of kitchen. Food Mgr diluted sant to 100PPM.
- Found some unused items in back bathroom & ice machine in kitchen not working or used.
- Found wet mop stored on floor in mop room. Rinse out mop & hang up to dry.
