  • All employees must have adequate knowledge of and trained as it relates to their assigned duties
  • Provide soap to handwashing station
  • Observed numerous of prepared food being sold to public, which came from unapproved source
  • Food such as: rice (2 pounds), beans (2 pounds) were prepared at home
  • Other foods such as chile verde (2 pounds), fajitas chicken (2 pounds), carnitas (1 pound), carne asada (4 pounds), 7 burritos, cheese and condiments were cooked/prepared at an approved health permit faclity, but employees showed no proof of purchase or preparation
  • All illegal food products stored at this facility was removed from selling area and stored away for employee to take home
  • Employees were notified that food cannot be sold or given away if prepared or stored at home
  • All food for public consumption must be stored and prepared at an approved facilties permitted by health office.

  • Potentially hazardous foods must be kept at or above 135 degrees or at or below 41 degrees at all times
  • Manager stated that these food items were brought from another Texaco half-hour ago
  • RE-tested temperatures and both items were above 137 degrees
  • Monitor temperatures with probe thermometer for hot holding and refrigeration units
  • Noted mice droppings at soda syrup location
  • Pest control is conducted weekly by Res.com
  • Manager stated that rodent problem has been eliminated
  • Remove droppings to prevent further attraction of vermin.
