- Observed employees lacking knowledge on food handling, sanitation, warewashing, and food contamination prevention
- All employees must have adequate knowledge and be trained in food safety handling as it relates to their assigned duties
- Observed employee drinking while conducting food preparation and a couple of other personal drinks stored improperly at food prep and storage areas
- No employee shall eat or drink at working areas, utensils storage or warewashing
- Personal drinks must be covered with containers lid, a straw, and store away
- Noted no employee washing hands during food handling, switching jobs and after touching body parts (face)
- All employees are required to wash hands as often necessary to prevent food contamination
- Noted handwash sink waste line disconnected fom the sewer line
- Immediately repair handwash sink to properly operate and make available/accessible for handwashing
- Observed food contact surfaces in great need of sanitizing: food preparation tables, inside refrigeration units, food storage containers, microwave, cutting board, shelvings
- Clean, sanitize, and maintain facility on daily basis to prevent food contamination
- Noted hot water at 3-compartment sink reaching 95 degrees
- Hot water at warewashing sink must be 120 degrees
- Waste water from warewashing sink not properly draining into floor sink
- Pipe is not long enough and waste water is splashing all over floor area
- Repair immediately.
